Ingredients

Quantity Ingredient
1 quantity Middle eastern
300g cooked grains for example bulgur wheat, pearl barley, spelt or a mixture, rinsed and drained
1 handful dried cherries or barberries
4 tablespoons toasted flaked almonds
1 generous handful flat-leaf parsley, coarsely chopped
1 generous handful mint leaves, coarsely snipped
2 teaspoons grated lemon zest
salt
pepper
1/2 pomegranate seeds

Method

  1. Warm the dressing in a small saucepan over a low heat. Add 3 tablespoons of dressing to the grain. Allow to cool. Add the other ingredients to the grain, except for the pomegranate seeds. Toss, then add some dressing or salt and pepper to taste. Sprinkle with pomegranate seeds just before serving.
