Ingredients

Quantity Ingredient
1/2 garlic clove, crushed
2 quantities Simple vinaigrette, made with balsamic vinegar
350g israeli couscous, cooked
80g red peppers marinated in oil, drained and diced
80g artichoke hearts marinated in oil, drained and diced
80g aubergines marinated in oil, drained and diced
60g red tomatoes marinated in oil, drained and halved
45g capers, coarsely chopped
40g black olives, pitted
1 handful basil leaves, torn
salt
pepper
1 dash lemon, Juiced

Method

  1. Add the garlic to the vinaigrette. Arrange all the other ingredients in a salad bowl and coat them generously with dressing. Season with salt, pepper and lemon juice to taste. Set aside for 20 minutes before serving to allow the flavours to mingle.
