Ingredients

Quantity Ingredient
80g cooked grain, such as barley, spelt or einkorn wheat
200g nicely ripe assorted tomatoes, quartered
100g cucumber in fine rounds
1/2 red onion, finely chopped
45ml lemon, Juiced, or more as desired
2 teaspoons ras el hanout spice mix or ground coriander
50g flat-leaf parsley, finely chopped
1 handful purslane, chopped
25g mint leaves, finely snipped
45ml extra-virgin olive oil, or more as desired
salt
pepper

Method

  1. Put the grain, tomatoes, cucumber and onion into a salad bowl. Add the lemon juice, Ras el Hanout, herbs, olive oil and season with salt and pepper. Toss gently and add extra lemon juice, olive oil, salt and pepper, as desired. Set aside for 20 minutes to allow the flavours to mingle before serving.
