Ingredients

Quantity Ingredient
1/2 teaspoon, chilli powder
2 quantities Middle eastern, replacing the lemon juice with lime juice
450g cooked or canned beans, drained and rinsed, such as black beans, kidney beans or haricot beans
1 red pepper, diced
1 green pepper, diced
1 red onion, finely chopped
30g coriander, snipped
lime, Juiced, as desired
salt
pepper

Method

  1. Mix the chilli powder into the dressing. Put all the other ingredients, except for the lime juice, salt and pepper, into a salad bowl. Pour over enough of the dressing to coat the ingredients well. Add lime juice, salt and pepper to taste. Set aside for 30 minutes before serving.
