Ingredients

Quantity Ingredient
30g fine oat flakes
20g pistachios, roughly chopped
20g hazelnuts, roughly chopped
1 tablespoon sunflower seeds
1 tablespoon linseed
1 teaspoon fennel seeds
4 tablespoons quinoa flakes
2 sprigs leaves thyme
2 tablespoons melted duck fat or olive oil
1 teaspoon salt

Method

  1. Preheat the oven to 150°C. Combine all the ingredients and spread them on a baking tray lined with greaseproof paper. Put in the oven for 25 minutes, keeping a close eye on it and stirring every 10 minutes: the mixture should be very lightly golden and slightly crunchy. Leave to cool before sprinkling over the finished salad.
