2 egg yolks
1 tablespoon lemon, Juiced, more as desired
1 large pinch salt, more as desired
250ml vegetable oil
2 tablespoons olive oil
1 heaped teaspoon dijon mustard

Method

  1. Beat the egg yolks with the lemon juice and salt with an electric whisk or manually until you have a creamy texture. Add the oils gradually in a thin stream, beating continuously until the mixture is thick and pale yellow in colour. Incorporate the mustard and add lemon juice or salt to taste. Keep chilled until serving.
