Ingredients

Quantity Ingredient
1 garlic clove, peeled and crushed
2 tablespoons olive oil
4 heaped tablespoons breadcrumbs
3 tablespoons chopped walnuts
1/2 lemon, Finely grated zested
3 tablespoons mint leaves, snipped
salt
pepper

Method

  1. Heat the garlic in the olive oil until it just begins to change colour. Add the breadcrumbs and walnuts and sauté until golden and crunchy. Remove from the heat. Add the zest, mint, salt and pepper, as desired. Leave to cool then sprinkle on the finished salad.
