I think it is essential to accompany ice cream with something sharp and crunchy – something that really snaps and explodes in your mouth when you bite into it. It should be almost neutral in flavour, certainly not sweet – it’s the texture I’m after. These thin little biscuits serve the same purpose as an ice cream cone, albeit not as a container. I like to make one large sheet and break it into shards to serve, but you can pipe it and shape it in the more traditional way if you prefer. These biscuits keep well for a few days in an airtight container.

Ingredients

125g unsalted butter, softened
125g icing sugar
125g plain flour
pinch salt
1 teaspoon vanilla extract
3 organic free-range medium egg whites

Method

  1. Line one large or two smaller baking trays with baking parchment.
  2. Place the butter and icing sugar in a bowl and beat with a handheld electric mixer until pale and smooth. Sift in half of the flour with the salt and beat well to combine. Repeat with the remaining flour. Add the vanilla and then finally beat in the egg whites.
  3. If you’re making one large biscuit sheet, paddle the mixture in a thin layer over the lined baking tray(s), using a palette knife. For individual biscuits, spoon the mixture into a piping bag fitted with a 1cm nozzle and pipe into 7–8cm lengths, leaving 5cm in between to allow room for the biscuits to spread during cooking. Place the tray(s) in the fridge for 20 minutes or so to allow the dough to firm up.
  4. Preheat the oven to 180°C. Take the tray(s) from the fridge and place on the middle shelf of the oven. Bake for 8–10 minutes if baking a whole sheet, until golden brown around the edges. Allow 6–8 minutes for individual biscuits.
  5. Remove from the oven and leave to cool slightly for a few minutes, then break the large sheet into pieces (if that’s what you have made). Transfer the biscuits to a wire rack to cool.
