Blueberry, lemon and mascarpone ice cream

This ice cream has a wonderfully nostalgic flavour. It reminds me of something sweet from my childhood, although I can’t quite put my finger on exactly what that was. It has a lovely texture too.

Ingredients

Quantity Ingredient

For the vanilla ice cream base

Quantity Ingredient
450ml organic double cream
350ml organic whole milk
1 vanilla pod, split in half lengthways
6 organic free-range medium egg yolks
120g caster sugar

For the blueberry flavouring

Quantity Ingredient
300g blueberries
80g caster sugar
1 lemon, finely pared zest
100g mascarpone

Method

  1. Prepare the vanilla ice cream base as described on page 183 and chill thoroughly overnight.
  2. The next day, put the blueberries into a saucepan with the sugar, lemon zest and a splash of water. Place over a medium heat and bring almost to a simmer, then turn down the heat and cook until the blueberries are soft and falling apart, about 10 minutes. The berries will have released a certain amount of liquid, creating a dark, slightly viscous syrup. The lemon zest should also be tender and translucent. At this point, remove the pan from the heat and allow to cool.
  3. Once cool, transfer the blueberries, softened lemon zest and syrup to a blender and purée until smooth.
  4. Put the mascarpone into a bowl and stir in the puréed blueberry syrup, then fold in the chilled custard base. Transfer to your ice-cream machine and churn until thick and creamy, according to the manufacturer’s instructions. Store the ice cream in an airtight container in the freezer until ready to serve.
