Tea-smoked fillets of wild salmon with pickled cucumber salad

Tea-smoking works really well with all oily fish, but especially with salmon – the delicate flavours complementing each other perfectly. I like to use a fragrant heady tea for smoking, such as Lapsang or Yunnan, but experiment to find out which ones you like best. The salmon can be tea-smoked the day before and kept overnight in the fridge if that’s more convenient.

4 wild salmon fillets

Cucumber salad

1 large cucumber, peeled and finely sliced on the diagonal
2 teaspoons sea salt

Dressing

2 limes, juiced
1 1/2 teaspoons sugar
1 tablespoon fish sauce
1 tablespoon chopped coriander leaves
1 tablespoon finely chopped mint leaves
1 garlic clove, peeled and finely chopped
1 red chilli, deseeded and finely diced
2 drops sesame oil

Method

  1. Prepare the tea-smoking mixture and set up the tea-smoking equipment as described in the toolbox. Tea-smoke the salmon fillets according to the toolbox instructions, cooking them for 3 minutes. Turn off the heat and leave the salmon to sit in the baking tin with the lid on for a further 3–4 minutes. Remove the lid, take out the fish and set aside until ready to serve.
  2. For the salad, peel the cucumber and cut into fine slices on the diagonal. Sprinkle with the sea salt, tossing gently with your fingers to distribute evenly. Place the slices in a colander and leave to stand for an hour.
  3. To make the dressing, whisk all the ingredients, except the sesame oil, together in a bowl. Finally add the sesame oil.
  4. Rinse the cucumber very lightly under cool water and pat dry with a clean, dry tea towel. Place in a bowl, drizzle over the dressing and toss gently to combine.
  5. Place the tea-smoked salmon fillets on serving plates and pile the cucumber salad alongside. Hand the mayonnaise around separately in a bowl.
