This Swedish ‘scrape together’ of ingredients shares the same heritage as bubble and squeak or steak hash: the idea being that you bring together left-over meat and vegetables in a pan for a hearty meal the day following a large roast dinner. Points of difference in the Swedish version include the mandatory inclusion of a pan-fried egg and some pickled beetroot on serving.

Ingredients

Quantity Ingredient
50g salted butter
300g roast beef, chopped into 1 cm dice
100g speck, or pork sausage, chopped into 2 cm dice
splash rapeseed oil
2 small onions, peeled and chopped into 1 cm dice
500g boiled potatoes, chopped into 2 cm dice
2 tablespoons chopped flat-leaf parsley

To serve

Quantity Ingredient
4 eggs
oil or salted butter, for frying
250g Heavy pickling solution, made using 250 g beetroot

Method

  1. In a cast-iron pot or heavy-based frying pan melt half the butter over a medium heat.
  2. Fry the beef and pork until they are warmed through and have taken on a little colour at the edges. Season, then transfer to a plate and set aside.
  3. Add a splash of rapeseed oil and the remaining butter to the pan, and fry the onion for 4 minutes. Add the potato, cook for 2 minutes, then stir in the meat mixture until cooked through. Stir through the parsley.
  4. In a separate non-stick frying pan, fry the eggs sunny side up in oil or butter. Serve the pyttipanna topped with an egg and some pickled beetroot.
