In Nordic countries a large lunch is served relatively early – at midday or earlier for nine-to-fivers. Personally, however, I need something to get through my mid-morning cravings, and while I’d love to eat a cinnamon bun everyday as a mid-morning snack, it would likely wreak havoc with a healthier agenda. Instead I have come up with some other treats that will sustain without providing the carb and sugar overload.
The recipes here make enough to save some for other days and can also be used for fika with guests. Also things like the beetroot crispbread and Icelandic flatbread are great additions to other meals. Don’t be put off by cooking times – there is return on the investment as many of the components of these dishes can be used later.
