Quinoa caviar, fresh cheese & green salad

Quinoa has a great texture that works well in salads. You could bind this mixture with whisked egg to turn it into patties for cooking if you wanted to. I like to garnish this salad with edible flowers and dehydrated berries, but you could use currants or other finely chopped dried fruit instead.

Ingredients

200ml beetroot juice
pinch salt
150g quinoa, rinsed
2 teaspoons sherry vinegar
1 teaspoon caster sugar
1/2 lemon, juiced
1/2 red onion, very thinly sliced
2 baby cos lettuces
or 1 super-fresh butter lettuce head, leaves separated and washed
120g Fresh cheese

Elderflower Vinaigrette

100ml elderflower cordial
2 tablespoons apple-cider vinegar
2 teaspoons dijon mustard
1/4 teaspoon salt
125ml rapeseed oil

To serve

nasturtiums or daisies, (optional)
dehydrated berries

Method

  1. Put the beetroot juice in a saucepan over a high heat, add the salt and bring to a boil. Add the quinoa to the pan, cover with a lid and simmer over a medium–low heat for 15 minutes, or until the beetroot juice has been completely absorbed and the quinoa is tender. Remove from the heat, stir in the vinegar and set aside to cool slightly.
  2. Mix the sugar and lemon juice together in a bowl until well combined. Add the red onion, mix again and set aside to macerate for 5 minutes, until the onion softens.
  3. For the vinaigrette, whisk together all the ingredients, except the oil, in a small bowl to combine. Continue to whisk, adding the oil in a slow, steady stream, until the dressing is creamy and the oil is emulsified.
  4. Divide the salad leaves between serving bowls. Crumble over the fresh cheese and top with the red onion and large spoonfuls of the quinoa. Drizzle over two tablespoons of the elderflower vinaigrette and sprinkle over a few edible flowers and dehydrated berries to serve.
