Serve this simple salad with crusty bread and barbecued sardines, or any other oily fish that your heart desires.

Ingredients

Quantity Ingredient
60ml extra virgin olive oil
1 lemon, juiced
250g bunch of rocket
15 black olives
1 vine-ripened tomato, chopped or cut into wedges

Method

  1. Whisk the olive oil and lemon juice together.
  2. Trim any tough stalks from the rocket. Wash the leaves and drain off the excess water, then dry thoroughly. Arrange the rocket on a plate, tearing up any larger leaves a little if desired.
  3. Scatter the olives and tomato over the rocket. Sprinkle with a pinch of sea salt, drizzle the dressing over and serve.
