Barbecued fresh anchovies

This recipe is best made with fresh anchovies, but if you can’t get them, use fresh sardines, or any other small, oily fish you like. It’s good to use an inexpensive portable fish grill basket (the type sold in camping and barbecue stores) to cook the anchovies in; the grill basket stops the delicate anchovies falling apart or slipping through the barbecue grill bars, and also makes them much easier to turn.

This dish is delicious with the Haricot bean salad.

Ingredients

Quantity Ingredient
1kg fresh anchovies
125ml olive oil
1 lemon, juiced
lemon wedges, to serve
crusty bread, to serve

Method

  1. Clean and gut the anchovies. Rinse in cold water, pat dry with paper towel, then place in a bowl. Sprinkle generously with sea salt, drizzle with the olive oil and gently toss to coat.
  2. Fire up your barbecue and bring it to a medium heat. Lightly oil a fish grill basket. Lay the anchovies on the bottom half of the grill basket, close the lid and fasten securely. (Depending on the size of your grill basket, you may need to cook the fish in batches.)
  3. Place the grill basket across the barbecue grill bars and cook the fish for 1–2 minutes on each side, or until just cooked through.
  4. Arrange on a serving plate and drizzle with the lemon juice. Serve with lemon wedges and crusty bread.
