Breakfast & morning tea

If you would like to create a traditional Turkish breakfast, I can tell you how my family did it.

Whoever got up first would put the pot on for the tea. One person would be sent to the bakery with a few coins to pick up a few loaves of hot crusty bread. This person would most likely be the smallest kid; in my family that was me.

With the leftover money I would buy myself some chocolate. When I’d return home with the bread, my mum would ask me for the change. I would say there wasn’t any, and then she’d say she’d check with the bakery! I’d be so scared, thinking maybe I had tell-tale chocolate stains on my face …

In the meantime, someone would set the table with bowls of olives, plates of sliced tomatoes, bowls of parsley and sliced cucumber, a plate of green chillies. There would always be a few different cheeses, some hard, some soft, like beyaz peynir, a soft white cheese like feta. One cheese, called dil peyniri, would be pulled apart to make strands, like thick hair. There would also be butter, honey and different jams. (Whenever there was an abundance of fruit, jam would be made. When the strawberries were everywhere, so was the jam. There would be peach jam, then quince jam, then sour cherry jam, plum jam … It’s like there was a jam for all seasons!)

In the centre of the table would be a big hot dish of eggs, boiled or cooked in ways I will show you in this book.

There would be small tea glasses and bowls of sugar cubes, with teaspoons already in the glasses. The first weak tea was poured for the young ones, with the strong tea given to the older ones.

Then my mum would do a stocktake of the breakfast ingredients and tell Dad what we needed — maybe it was cheese and olives — and he would have to go to the special breakfast-goods shops.
