Ingredients

Quantity Ingredient
230g caster sugar
185g semolina
250g plain yoghurt
75g plain flour
1 tablespoon baking powder
1 vanilla bean, split lengthways, seeds scraped

Syrup

Quantity Ingredient
690g caster sugar
625ml cold water
1 tablespoon lemon juice

Method

  1. Preheat the oven to 180°C.
  2. Mix all the syrup ingredients in a saucepan and bring to the boil. Reduce the heat and simmer for 10–15 minutes, or until slightly thickened. Remove from the heat and allow to cool.
  3. Meanwhile, put the sugar, semolina, yoghurt, flour, baking powder and vanilla seeds in a bowl and mix together. Pour the batter into a 27 cm springform cake tin.
  4. Bake for about 30 minutes, or until a toothpick inserted in the centre of the cake comes out clean.
  5. As soon as you take the cake out of the oven, pour the cooled syrup over the top.
  6. This cake is also great the next day — if there is any left over!
