When Mum made this dessert when we were children, she would keep the pumpkin seeds, sprinkle them with salt and bake them. After dinner we would sit around and nibble on them. Another example of Turkish mamas not wasting anything.

Ingredients

Quantity Ingredient
1kg pumpkin, peeled, seeded and cut into bite-sized pieces
60ml hot water
115g caster sugar
125g chopped walnuts

Method

  1. Arrange the pumpkin pieces in a frying pan large enough to hold them all in a single layer. Splash the hot water over the pumpkin and sprinkle with the sugar. Cover and steam over a medium heat for about 10–15 minutes, or until the pumpkin is just soft.
  2. Place in a bowl and serve warm, sprinkled with the walnuts.
