Serve these delightful puddings sprinkled with crushed pistachio nuts, or with stuffed figs or caramelised figs — whatever your heart chooses.

Ingredients

Quantity Ingredient
45g rice flour
2 tablespoons cornflour
55g sugar
1 litre milk
150g pistachio nuts
1 vanilla bean

Method

  1. Combine the rice flour, cornflour, sugar, milk and pistachios in a saucepan. Using a small sharp knife, slice the vanilla bean in half lengthways. Scrape the vanilla seeds into the milk mixture, then drop the bean pod in as well. Mix together well.
  2. Stirring constantly, cook over high heat for 10–15 minutes, or until the mixture thickens enough to thickly coat the back of the spoon. Remove the vanilla bean pod.
  3. Pour into six individual 250 ml serving dishes. Cover and refrigerate for a few hours, until chilled.
