Purslane is the world’s quickest, healthiest and easiest food. You will love it forever. It is full of goodness, and it is delicious. Purslane is also known as pigweed in Australia, yet it is the most wonderful vegetable. Many of us probably have it in our gardens and we pull it out as if it were a noxious weed. Please don’t do this. Instead, harvest it and cook it and you will be sure to impress everyone.

Ingredients

Quantity Ingredient
2 garlic cloves, crushed
250g Yoghurt cheese
250g purslane
extra virgin olive oil, for drizzling

Method

  1. Fold the garlic through the yoghurt cheese.
  2. Wash the purslane and discard the thick stalks. Separate any larger leaves. Mix the purslane through the yoghurt cheese and season with sea salt.
  3. Arrange the salad on a flat plate, drizzle with olive oil and serve.
  4. This salad can be prepared several hours ahead.
