When Turkish people leave their mother country to make a new life abroad, this is the salad that always reminds them of home.

Ingredients

Quantity Ingredient
3 vine-ripened tomatoes
3 tablespoons pomegranate molasses, see note
1 red onion, diced
20g mint leaves
30g chopped flat-leaf parsley
2 long green chillies, finely chopped
50g walnuts, finely chopped
250ml extra virgin olive oil
pul biber, (see note) for sprinkling

Method

  1. Cut the tomatoes into 1 cm cubes and set aside.
  2. In a serving bowl, mix together the remaining ingredients, except the pul biber. Season with sea salt and freshly ground black pepper, then gently mix the tomatoes through.
  3. Serve at room temperature, sprinkled with pul biber.
  4. This salad is best enjoyed soon after making.

Note

  • Pomegranate molasses is made from the dark red juice of the pomegranate fruit, which has been cooked down to form a thick, tangy syrup. It is available from Middle Eastern grocers and fine food stores.

Note

  • Pul biber is a red powder made from dried Aleppo peppers. It is mild to medium in heat and the Turkish love sprinkling it over just about anything. If you can’t find it in spice shops or Middle Eastern grocers, you can use chilli flakes instead.
