Sardines wrapped in vine leaves

Ingredients

Quantity Ingredient
1kg fresh sardines, cleaned and gutted
vine leaves, for wrapping the sardines
1 garlic cloves, chopped
2 bay leaves
sunflower oil, for pan-frying
lemon wedges, to serve

Method

  1. Wash the sardines in fresh water and dry completely using paper towel.
  2. Wash the vine leaves and dry them using paper towel.
  3. Sprinkle sea salt and freshly ground black pepper over each sardine, then wrap each fish in its own vine leaf.
  4. Place the garlic, bay leaves and about 2 cm of oil in a large heavy-based frying pan. Warm the oil over high heat.
  5. When the oil is hot, cook the wrapped sardines, in batches if necessary, for a few minutes on each side.
  6. Serve hot, with lemon wedges.
