Spicy tomato dip

Ingredients

Quantity Ingredient
250g onions
250g tomato paste
1 bunch flat-leaf parsley, finely chopped
125g finely chopped green chillies
250g tomatoes, seeded and finely chopped
125ml lemon juice
125ml dried chilli flakes
125ml olive oil

Method

  1. Grate the onions and squeeze out the excess liquid.
  2. Mix the onion with the remaining ingredients in a large bowl. Cover and refrigerate for about 3 hours before serving. Serve as a dip, or with chicken or lamb.

Variation

  • Stir through 250 g chopped walnuts or 2 crushed garlic cloves before serving.
