Groups of women in Turkey get together at one another's houses once a month. The woman hosting the gathering prepares the food and everyone brings a small donation. Most people in Turkey are not wealthy, so it’s a way of helping each other out with the bills, while enjoying a meal and talking together.

Ingredients

Quantity Ingredient
2 cups fine burghul
3 tomatoes, finely chopped
4 spring onions, chopped
1 red onion, chopped
1 handful mint, chopped
1 handful flat-leaf parsley, chopped
1 tablespoon tomato paste
1 teaspoon dried chilli flakes
1 teaspoon ground cumin
80ml olive oil
1/2 lemon, juiced
lettuce leaves, to serve
lemon wedges, to serve

Method

  1. Mix the burghul and 375 ml boiling water in a bowl. Set aside for 20 minutes, or until all the water has been absorbed.
  2. Add the remaining ingredients to the burghul and mix to combine. Serve on a platter with the lettuce leaves and lemon wedges.
