Tomato sauce

Ingredients

3 tablespoons olive oil
1 onion, roughly chopped
3 garlic cloves
500g canned crushed tomatoes
2 teaspoon sugar
sea salt
freshly cracked black pepper
3 tablespoons cumin seeds
1kg lamb mince
1 large brown onion, grated
4 handfuls flat-leaf parsley, chopped
2 tablespoons baharat
sea salt
freshly cracked black pepper
125ml sunflower or canola oil
2 handfuls flat-leaf parsley, extra, chopped
Garlic yoghurt, to serve

Method

  1. To make the tomato sauce, heat the olive oil in a large saucepan. Gently fry the onion over medium heat for 10-15 minutes, or until soft but not browned. Add the whole garlic cloves and fry for 2 minutes more. Pour in the tomato and cook for 30 minutes, or until the mixture has thickened. Stir in the sugar halfway through cooking. Season to taste with sea salt and black pepper. Cool slightly, then purée until smooth.
  2. Fry the cumin seeds in a dry frying pan over high heat for 5 minutes, or until fragrant. Transfer the seeds to a mortar and finely grind with a pestle.
  3. Put the lamb mince in a large bowl. Add the onion, parsley, baharat and cumin and season with sea salt and black pepper. Mix with your hands until well combined.
  4. Roll 1 tablespoon of the lamb mixture into an oval shape between the palms of your hands. Heat the oil in a frying pan and cook the kofte over high heat for 2 minutes each side, or until just firm. Taste, then adjust the seasoning if necessary. Roll the remaining lamb mixture into balls and fry until just firm. Drain on paper towel.
  5. Serve with the parsley, tomato sauce, garlic yoghurt and a simple salad.

Note

  • You can also barbecue the kofte, or bake them in a 180°C oven for 8 minutes.
