This is a recipe of my sister’s for super-quick and easy mouthfuls of sweetness. They’re also ideal for a snack on the hoof. Roll them in your favourite nuts – toasted and coarsely chopped – or try them with a coating of flaked, toasted coconut. Ideally, buy organic un sulphured apricots and check they have not been coated with oil or hydrogenated fat to stop them from sticking together.

Ingredients

Quantity Ingredient
50g raw pistachio kernels, plus extra for rolling (optional)
100g dried apricots
1 lime, zested and juiced
1 tablespoon maple syrup
1 tablespoon hazelnuts, dry-fried and finely chopped

Method

  1. Simply blend together all the ingredients except the hazelnuts in a food processor.
  2. Roll into walnut-sized balls and put into the fridge to harden.
  3. Then roll the balls in the finely chopped hazelnuts (or more pistachios). Store in an airtight tin or jar and eat within a couple of weeks.
