German-style potato salad with oregano dressing

To be honest, making potato salad is not our strong point. So we’ve come up with this foolproof potato salad recipe that even we can’t mess up. This one is particularly popular when we make it for cook-outs (maybe the clarified bacon fat has something to do with it?), and a sure-fire hit with those who aren’t usually fans of gloopy, mayo-esque salads.

Ingredients

Quantity Ingredient
1kg red skin potatoes
8 Down-home smoked bacon, or good-quality streaky bacon
2 celery sticks, finely chopped
small bunch spring onions, finely chopped
handful pitted green and black olives, sliced
2 tablespoons finely chopped flat-leaf parsley

For the oregano dressing

Quantity Ingredient
2 tablespoon white wine vinegar
1 teaspoon white sugar
1/2 teaspoon fine sea salt
1/2 teaspoon freshly ground black pepper
1 teaspoon dried oregano
1 tablespoon fresh lemon juice
50ml light olive oil

Method

  1. Put the potatoes in a large pan, cover with cold water and bring to the boil over high heat. Reduce to a simmer and cook for about 15 minutes, until just tender, and drain.
  2. While the potatoes are cooking, fry the bacon on medium-high heat, until very crisp. Pour the fat through a fine-mesh sieve, into a bowl. Rest the crisp bacon on kitchen towel, allow to cool then cut into small pieces.
  3. At this stage, decide if you want the skin on or off the potatoes. If you want to remove the skins, peel them using a paring knife while still hot but cool enough to handle. Put the potatoes in a bowl and toss with 2 tablespoons of the sieved bacon fat. Set aside to cool.
  4. Make the dressing by whisking the ingredients, slowly incorporating the oil in a steady stream, until combined.
  5. When the potatoes have completely cooled, mix in the celery, spring onions, bacon bits, olives and parsley. Add the oregano dressing and toss until everything is well combined. Cover and chill in the fridge for 1 hour.
