This great summery salad looks spectacular with its vibrant colours, and it tastes so fresh and healthy. You’ll feel great after eating this!

Ingredients

1 punnet ripe strawberries
2 just-ripe mangoes
2 slices watermelon
1 large orange
1 small lemon
2 tablespoons honey
1 punnet raspberries
12 mint leaves

sharp knife and chopping board
large glass serving bowl
peeler
teaspoon
lemon squeezer
measuring spoons
container with a tight-fitting lid (a screw-top jar is perfect)

Method

  1. Ask a grown-up to help you prepare all the fruit. First slice the green leaves and tops off the strawberries and cut them in half.
  2. Use a sharp knife to cut the ‘cheeks’ (the wide sides) off the mangoes. Score mango flesh (the soft inside) with the knife in a crisscross pattern to make squares. Turn the mango cheeks inside-out and use a teaspoon to scoop out all the little squares.
  3. Cut the rind off the watermelon slices then use your fingers to pick out all the seeds and discard them. Chop the watermelon into 1 cm cubes.
  4. Cut the orange and lemon in half and juice them. Pour the juice into a container and add the honey and vanilla. Put the lid on and give it a good shake to mix everything together.
  5. Gently combine all the fruit in a large glass serving bowl. Pour on the sweet juices and use salad servers to toss everything together gently. Top with mint leaves.
