Tasty tuna bake

This is a brilliant recipe to make whenever you have any leftover rice in the fridge. Most of us love tuna, and the golden cheese topping makes it extra tasty.

Ingredients

1 small red capsicum, seeds and white membrane removed
1 medium onion, roughly chopped
2 tablespoons, olive oil
1 tablespoon tomato paste
1/2 cup milk
1 tablespoon plain flour
1/2 teaspoon salt
3 pinches black pepper
1 x 425 g can tuna
1 1/2 cups cooked white rice
1 1/2 cups grated cheddar cheese

22 cm baking dish
mixing bowl
food processor
oven mitts
grater
spatula
measuring spoons

cake slice or egg flip

Method

  1. Ask a grown-up to help you preheat the oven to 180ºC.
  2. Ask a grown-up to help you put the capsicum and onion into a food processor and blitz it to a paste. You may need to scrape the sides down with a spatula to ensure all the big bits get properly chopped up. Once the grown-up has removed the blade from the processor, tip the paste into a small bowl.
  3. Measure the oil into a frying pan and ask a grown-up to help you heat it over a medium heat. Carefully scrape the paste into the frying pan. It’s best to wear oven mitts while you do this, in case it spatters. Add the tomato paste and fry for about 10 minutes, stirring every now and then.
  4. Add the milk, flour, salt and pepper to the frying pan. Mix well and cook over low heat for a couple of minutes.
  5. Ask a grown-up to help you lift the pan off the heat. Add the tuna, breaking up the chunks carefully and mixing it in very well.
  6. Spread the cooked rice over the base of the baking dish. Spoon in the tuna mixture and spread it over the rice. Finally, top with the grated cheese.
  7. Ask a grown-up to put the tuna bake into the oven and cook for 14 minutes, or until the cheese is golden.
  8. Ask a grown-up to remove the baking dish from the oven and divide it into 4 big portions. It’s best to wear oven mitts to protect you from any hot steam. Lift the squares onto a plate using a cake slice or egg flip and serve it straight away.
