Creamed artichoke, garlic & parmesan

Ingredients

Quantity Ingredient
100g soft cheese
150g small artichoke hearts, canned or bottled
3 tablespoons olive oil
salt
pepper
1 small garlic clove, crushed
4 slices wholemeal bread
100g parmesan
12 basil leaves

Method

  1. Blend the soft cheese with the artichoke hearts, 2 tablespoons of olive oil, 1 pinch of salt and pepper and the garlic clove. Spread the slices of bread with the cream mixture. Make large shavings of Parmesan with a peeler. Top with the Parmesan shavings and basil leaves, drizzle with the remaining olive oil, and season with salt and pepper, if required before serving.
