Ingredients

Quantity Ingredient
1 salmon steak
1 avocado, nice and ripe
4 sprigs coriander
6 slices multigrain bread
1 lime, juiced
3 tablespoons olive oil
salt
pepper

Method

  1. Cut the salmon into thin slices (sashimi). Peel the avocado, cut it in half, remove the stone, cut in half again lengthwise, then into slices widthwise. Destalk the coriander. Lay the sashimi and slices of avocado on the bread, then drizzle with lime juice and olive oil. Top with the coriander leaves. Season with salt and pepper before serving.
