Ingredients

Quantity Ingredient
4 slices artisan country bread
4 tablespoons olive oil
250g brandade, (an emulsion of salt cod and olive oil)
1 handful hazelnuts
1 handful almonds
2 handfuls rocket
2 tablespoons hazelnut oil
salt
pepper

Method

  1. Brush each slice of bread with 1 tablespoon of olive oil, then spread with the brandade. Chop the hazelnuts and almonds and sprinkle them over the brandade. Put under the grill for 5 minutes. Top each slice with a little rocket and drizzle with hazelnut oil. Season with salt and pepper before serving.
