Ingredients

Quantity Ingredient
4 slices wholemeal bread
1 garlic clove
1 courgette
8 tablespoons cancoillotte or other spreadable cow’s cheese
4 pinches nutmeg
4 slices smoked streaky bacon
4 sprigs thyme
salt
pepper

Method

  1. Rub one side of each slice of bread with the peeled garlic clove. Cut the courgette into thin rounds. Spread each slice of bread with 1 tablespoon cancoillotte and sprinkle with a pinch of nutmeg. Then arrange the courgette rounds and slices of smoked streaky bacon on top. Spread each slice with another spoonful of cancoillotte and sprinkle with thyme leaves. Place on a baking tray lined with baking parchment and put under the grill for about 10 minutes. Season with salt and pepper before serving.
