Ingredients

Quantity Ingredient
2 eggs
1/2 teaspoon sugar
salt, to taste
pepper, to taste
spring onions, finely chopped
1 teaspoon refined shrimp paste

Method

  1. This mixture may also be steamed for 10 minutes or until done, or it may be fried as an omelette.
  2. Beat the eggs in a small bowl with the sugar, salt, pepper and spring onions. Add the shrimp paste and beat in. As you are cooking rice and the water has evaporated from the surface, rest the bowl on top of the rice and replace the lid. When the rice is cooked the egg will be too. Cut it into slices and serve with the rice.
