Ingredients

Quantity Ingredient
1 fresh chilli, chopped
2 garlic cloves, sliced
1/2-1 teaspoon sugar
3 tablespoons tamarind water
1 tablespoon fish sauce, diluted with an equal amount of water, or more to taste

Method

  1. In a mortar mash the chilli, garlic and sugar to a paste. Add the tamarind water and mix then stir in diluted fish sauce to taste, at the same time adjusting the other flavours. Serve in individual sauce bowls.
