Dipping sauce with shrimp paste

Ingredients

Quantity Ingredient
sesame seeds, roasted and crushed
or fresh chilli, finely shredded
2 tablespoons lime juice
2 tablespoons refined shrimp paste
1/2-1 chilli, chopped
3 tablespoons water or beer
1/2 teaspoon sugar

Method

  1. Heat a dry pan to hot and roast the sesame seeds (if you are using them) until they are brown. Remove and set aside.
  2. Pour lime juice over the shrimp paste and stir until it is well mixed. In a mortar mash the chopped chilli to a paste. Add the shrimp paste mixture, water and sugar and mix. Sprinkle the sesame seeds or shredded chilli over the sauce after it is dished out.
