Ingredients

Quantity Ingredient
1 catfish or firm-fleshed saltwater fish, or a large trout, about 600–800 g
1 teaspoon light soya sauce
3 garlic cloves, smashed and chopped
1/2 teaspoon ground pepper
oiled banana leaf or foil

Method

  1. Clean and scale the fish, slash it three times on each side and rub it with soya sauce, garlic and pepper. Wrap in an oiled banana leaf or sheet of foil and cook over a barbecue fire or in an oven for 20 minutes.
  2. An oily fish such as mackerel may not need to be wrapped.
