This recipe comes from the north where meat, especially pork and pork products, is very popular and is cut more substantially than elsewhere.

Ingredients

Quantity Ingredient
4 garlic cloves, smashed and chopped
1/4 cup soya sauce
2 tablespoons sherry, (optional)
1 tablespoon sugar
1/4 teaspoon freshly ground pepper
1kg pork belly spareribs

Method

  1. Combine the garlic, soya sauce, sherry, sugar and pepper and marinate the spareribs for 2 hours in the mixture, turning them over from time to time. Barbecue over a charcoal fire, basting occasionally with the marinade. If you intend to eat the spareribs with rice, chop into smaller pieces, arrange on a serving dish with lettuce, cucumber and tomato.
  2. The spareribs may also be cooked under a griller or, better still, roasted on a rack in a medium oven, basting frequently.
