Ingredients

Quantity Ingredient
1/2 cup vinegar
1/4 cup water
1 tablespoon sugar
2 tomatoes, sliced and then cubed
1 small or lebanese cucumber, cut into four lengthwise, seeded but skin left intact, then sliced
6 shallots or spring onions, sliced
or 1 red spanish onion, halved across then thinly sliced lengthwise
red chillies, chopped, to taste (optional)

Method

  1. Heat vinegar, water and sugar until the sugar dissolves. Allow to cool, pour over the vegetables and mix well.
