Shrimp paste sambal

This is the most common Malay side dish, eaten with virtually everything. Only a tiny quantity is placed on the edge of the plate, to be dipped into cautiously.

Ingredients

Quantity Ingredient
2 kaffir lime leaves, (optional)
8 red chillies
salt, to taste
2.5 x 2.5cm slice shrimp paste, roasted up to 3 or 4 times this amount may be used depending on personal taste
lime juice, to taste

Method

  1. Remove the spines from the lime leaves, if you are using them, and shred finely. Slice the chillies. Put the chillies in a mortar with salt and pound them to a fine paste. Pound in the lime leaves then crumble in the shrimp paste and pound everything together well. Add lime juice to taste and to moisten. Serve in a small dish.
