Method

  1. Use whole fish that are not too big. Clean and wash the fish, make three slashes across each side and rub with salt before grilling.
  2. Grilled pork, fish and other delicacies such as whole frogs balanced in split bamboo skewers are a common sight in markets in Laos and north-eastern Thailand.
