This sambal is very good with grilled fish.

Ingredients

Quantity Ingredient
5 shallots, cut into 2 or 3 pieces
4-6 red and green chillies, sliced coarsely into rounds
2 tomatoes, chopped
1 tablespoon lime juice
salt, to taste
small handful lemon basil

Method

  1. Toss everything together and serve in a bowl next to the fish, to be eaten with it.
  2. Menadonese Ikan (Menadonese Grilled Fish)

    A cooked sauce – Rica-rica – is made using almost the same ingredients. Grind the shallots and chillies to a paste, adding a thick slice of ginger, grind again and fry until fragrant. Add the tomatoes and stir-fry until soft, stir in lime juice and salt and spoon over the fish.
  3. Ayam Rica-rica (Menadonese Grilled Chicken)

    Make the same cooked sauce using 1⁄2 teaspoon shrimp paste instead of ginger and pour over charcoal-grilled chicken.
