Chilli–shrimp sauce condiment

Petis is another concentrated, salty prawn extract like terasi, but black in colour, a little sweet and the consistency of molasses. You can buy it in Asian food stores but it will take you a while to use it up. Replace with Thai fish sauce if you must.

Ingredients

Quantity Ingredient
8 green bird’s eye chillies, chopped
3 medium-sized garlic cloves, sliced
1 teaspoon petis
salt, to taste

Method

  1. In a mortar or a food processor attachment grind everything to a rough paste. Put on a small sauce dish and serve with fried noodle dishes, especially those with prawns.
