Ingredients

Quantity Ingredient
3cm piece young fresh ginger, peeled and smashed
10 fresh red chillies, or to taste
a good dash white vinegar or lime juice
salt
chicken stock, to moisten

Method

  1. In a mortar or a food processor attachment, grind the ginger smoothly, add the chillies and grind into a rough paste (you can soften the chillies first by blanching them quickly in boiling water or in a microwave, if you wish). Add a little vinegar and salt to taste and moisten with chicken stock.
