Chilli–coconut condiment

Ingredients

Quantity Ingredient
1/2 young fresh coconut, for grating
or 125g prepared desiccated coconut
2 red chillies
1/4 teaspoon shrimp paste, roasted
or 1 slice resurrection lily, chopped, (optional)
1/4 brown onion, chopped
or 2 small shallots, sliced
1/2 garlic clove, smashed and chopped
1 kaffir lime leaf, shredded
sugar, to taste
salt, to taste

Method

  1. Remove the brown skin from the coconut and grate the flesh finely. Grind the chillies, shrimp paste or resurrection lily, onion and garlic to a rough paste. Mix all the ingredients together well and allow to stand for a while before serving.
