Raw vegetable salad

This quick and popular dish is clearly related to the Thai Som tam malako and the Lao Tam mak houng. It, too, is sometimes made with shredded green papaya.

Ingredients

Quantity Ingredient
3 cups vegetables, (see Note)
2-3 tablespoons fried peanuts, roughly crushed
sliced cucumber, for garnish
tomato, for garnish
pineapple, for garnish (optional)

Dressing

Quantity Ingredient
1 tablespoon white sugar
2 tablespoons water
3 small red chillies, sliced
1 1/2 tablespoons dried prawns, soaked in hot water for 1 minute and drained
salt, to taste
2 tablespoons white vinegar

Method

  1. Make sure the vegetables are crisp by soaking them in water with a pinch of sugar added. Drain and dry in a lettuce spinner then place in a salad bowl.
  2. To make the dressing, briefly heat the sugar with some of the water in a saucepan until it dissolves. Cool. Pound the chillies and the prawns to a rough paste. Mix all the dressing ingredients together, adding more water if you wish to dilute it, and toss with the vegetables and the peanuts.
  3. Garnish with cucumber, tomato and pineapple.

Choose from the following salad vegetables:

  • Inner leaves of raw cabbage, shredded; small Lebanese cucumbers, complete with skin, cut into matchsticks; yambean (bangkuang; Pachyrrhizus erosus) or small Japanese radish, cut into matchsticks; beansprouts, topped and tailed; carrot, cut into matchsticks
