Ingredients

Quantity Ingredient
1/2 teaspoon ground nutmeg
2 teaspoons coriander seeds
2 teaspoons sesame seeds
6-10 red chillies
5cm piece fresh galangal, chopped
or 2 teaspoons galangal powder
2cm piece resurrection lily, chopped
8cm piece fresh turmeric, chopped
5cm piece fresh ginger, chopped
5 roasted candlenuts or almonds or macadamia nuts, smashed
2.5 x 2.5 can slice shrimp paste
6 small garlic cloves
5 shallots
1/2 teaspoon freshly ground black pepper
1/2 cup water

Method

  1. To make the spice paste, grind nutmeg, coriander and sesame seeds finely in an electric grinder. Mash all the other ingredients to a paste, mixing in the ground spices at the end.
