The traditional foods served at the Javanese Bruwah slametan (the Breaking of the Fast) include nasi kuning and an Indonesian omelette. Both may be combined in a special garnished nasi kuning for parties.

Method

  1. To cook the rice, proceed as for Nasi gurih but when you add the coconut milk add half a tablespoon of mashed fresh turmeric (or 1⁄2 teaspoon ground turmeric), stirring in to achieve an even colour. Also add 1 kaffir lime leaf, a salam leaf and a bruised stalk of lemongrass as well as the screwpine leaf.
  2. To serve, remove the leaves and the lemongrass, mould the yellow rice on to a flat plate and scatter or arrange over the top some thin omelette sliced into 5 x 1⁄2 cm strips, some lemon basil leaves and some sliced red chillies. Arrange small separate heaps of Sambal goreng kambing or Sambal goreng kering, Serundeng kacang, some very small balls of Rempah or fine slices of roast chicken meat and perhaps Dendeng belado around the edge of the plate. Serve garnished with kerupuk and sliced cucumber.
