Method

  1. Kerupuk is a large crispy slice made from a batter of dried prawn. Even in Indonesia, it is bought already processed and only needs to be deep-fried and drained just before serving. This is the system that is best, but you can also cook the slices quickly and effortlessly in a microwave oven. Place three or four slices on the tray, leaving enough space between to allow them to swell up, and cook on high for 1 minute.
  2. Be sure when you buy kerupuk to get the authentic large one, slightly brown in colour and natural-looking, rather than the small pink and white ‘prawn crisps’ available in packets, as the latter make a poor substitute.
