Quantity Ingredient
1 good-sized bitter melon
1 tablespoon fish curry powder, the commercial Indian fish curry powder from Malaysia is good here as the flour content is an advantage
2-3 tablespoons vegetable oil
salt, to taste
lime juice, to taste

Method

  1. Cut the bitter melon in half lengthwise then slice each half across into fine slices. Soak the slices in salted water to remove the bitter taste. Mix with the curry powder.
  2. Heat the oil in a pan and fry the bitter melon and curry powder until the bitter melon is cooked and dry. Add salt and a squeeze of lime juice to taste and serve.
  3. This is a dry curry which also works well with 500 g okra (or ladies fingers). Wash and slice the okra horizontally then proceed as above, frying them until they are cooked, dry and not slimy. Finish as for bitter melon.
